The most important meal of the day, or so I was always told. I love our weekend breakfasts - pancakes, eggs, croissants, porridge, the full English (not all on the same day I hasten to add).
But admittedly, our workday mornings are of the fairly mundane cereal, fruit and toast variety. Unless of course a certain 3 year old decides he is going to have a lie in, thereby necessitating a picnic breakfast in the car on the school run and a lot of stray cheerio collection afterwards.
I view ungluing them from his car seat as punishment for not managing to be together enough in the mornings to get everyone dressed fed and out of the house on time. If I were a true domestic goddess I would of course have a stock of Nigella's Breakfast Bars on hand ready to dispense to tardy children.
It's one of those recipes I've been meaning to make forever, only to find I am missing a vital ingredient. But in my new spirit of organisation, I wrote it all down on a shopping list, bought it and made them. Yummmm!

Breakfast Bars
- 1x395g can condensed milk
- 250g rolled oats
- 75g shredded coconut
- 100g dried cranberries
- 125g mixed seeds (pumpkin, sunflower, sesame)
- 125g natural unsalted peanuts
- Preheat the oven to 130C and oil a 23x33x4cm baking tray
- Warm the condensed milk
- Mix together all the other ingredients then mix in the warmed condensed milk with a spatula
- Spread the mixture into the tin and press down with the spatula
- Bake for one hour then remove from the oven and let cool for about 15 minutes
- Cut into bars and allow to cool completely.
I skipped the peanuts, as the boys aren't keen on them. But I'd imagine you can go to town tweaking the dry ingredients to suit yourself.
With an entire tin of condensed milk, I wouldn't imagine they are the healthiest option for every single day, But I have to admit to being quite partial to one with a coffee when I get home from my mummy taxi service shift. And the odd late night one. But then, I could eat breakfast three times a day quite happily. Especially if Jen was responsible for setting the menu.
